Ambience Carnival Concludes With a Bang!



●     Live performances by renowned musical artists like Guru Randhawa, FazilPuria, Tatava K, Nina Shah & Malika Haydon and many more, enthralled the audience

●     Mall organized several entertainment activities in association with The Grub Fest 

New Delhi, 27th Feb 2017: A three day long ‘Ambience Carnival’ organized by Ambience Mall, Vasant Kunj, intended to entertain people with live music, fashion, food and entertainment, was concluded on Sunday. The carnival had all the ingredients of a perfect mela, which attracted hundreds of people from all walks of life.  Food zone, which was set up in association with The Grub Fest, offered a good culinary experience to the visitors.

All through the three days of the fest, people continued to pour in making the carnival grand and unforgettable. Young and old alike were seen excitedly engaged in the activities lined up during the carnival. Live musical performances by renowned musical bands and artists like Punjabi singer Guru Randhawa; Haryanvi singer and rapper Fazilpuria; Chandigarh based young duo artists Hari & Sukhmani; Music producer and disc jockey Tatva K; Electro duo Alpha x omega; famous female DJ Duo Nina Shah & Malika Haydon (The Elektrovertz fame); DJ Saif Khan; Beatcrush (DJ/Producer and Instrumentalist, Siddharth Sethi) enthralled the audience with their spectacular renditions of Punjabi music, Bollywood hits and Electronic music.

The carnival also witnessed food zone enticing the guests with different flavours. Restaurants such as {Niche} Cafe 2.0 Cafe & Bar, Al Yousuf, Bunta Bar, CJ's Fresh, DoggyStyle, Dunkin Donuts, Fluffles, Fork 'N' Spoon, Iqbal's, Koyla Kebab, Oh So Stoned!, Waffle Factory, Twigly and many more displayed their signature delicacies and gave customers a chance to enjoy variety of scrumptious food under one roof.  Other attractions included entertaining performance by clowns, RJ performances and flea market comprising of stalls for clothing, accessories, jewellery, home décor and home-made food products.

Talking about the success of the carnival Mr. Arjun Gehlot, Director, Ambience Mall, said, “I am thrilled to witness that a large number of people have turned up for our carnival, which created an entertaining environment for our audience. A series of activities like live music performances, food fest, flea market and other recreational activities were well appreciated by the crowd. Live performances by all the artists and scrumptious food at the food stalls here was a grand treat for visitors. We will continue to organize more such cultural events in our mall to keep entertaining our customers.”

Ambience Organizes ‘Ambience Carnival’
One of its kind Terrace Food Festival & Live Music all served over One Roof!

Ambience Mall, Vasant Kunj, gave a wonderful start to the weekend by kick-starting its three day long ‘Ambience Carnival’ yesterday. The carnival is aimed at entertaining people with food platter organized by The Grub Fest to indulge in; along with the live grooving music performances from leading musical bands.

Electro duo Alpha x omega; famous female DJ Duo Nina Shah & Malika Haydon (The Elektrovertz fame); DJ Saif Khan; Beatcrush (DJ/Producer and Instrumentalist, Siddharth Sethi) offered a musical vibe to the carnival. Music fanatics turned up in huge numbers to listen to all the mind blowing live performances. The audience hummed to the tunes of these renowned artists.

Apart from musical performances, food zone enticed the guests with different flavours. LA PIAZZA - A BRILLIANT ADIEU TO WINTERS





Delhi doesn't seem to like the gentle passage of winter to spring to summer. It's with mix the feelings that I see winter finally take a leave and take away with it all its sights and smells and flavours - all of which had taken up residence in our lives. It's funny how we imagine things will always stay the same and forget that change is inevitable. It needn't always be something we are prepared for, but I believe one could always look at it as chance to start afresh, reinvent, invigorate, experiment and have a grand adventure. 

But before we move on, a little stop to celebrate the goodness that winter had brought with it. A celebration of the winter menu at La Piazza, Hyatt Regency, New Delhi. Chef Ivan and Alessandro are magicians we all know that by now. How beautifully they marry rustic flavours from their grandmothers' kitchens to the sophistication of Milanese avant garde culture.

 
From the hearty soup to the wholesome dessert, the entire meal curated especially for the table by the inimitable chefs was just what one needed to wrap up winter in velvet box to cherish until next time. LaPiazza does some of the best breads in town. They've been around since 1994 and probably the benchmark when it comes to judging Italian cuisine in Delhi. Comfort in every spoonful, the place is just the right combination of homely and fancy. 


So we broke bread, well, a wonderfully fragrant foccacia actually, dipped it in the herbed olive oil and the mood for the evening was set. Sublime, content, and ready to imbibe all the deliciousness. As we clinked our Chardonnay, course after course unfolded most seamlessly as one expects from the brilliant hospitality of Hyatt. The hearty mushroom soup flavoured ever so gently with truffle oil and freshly baked bread with Parma ham led the way to a very refreshing chicken salad. The warm mushroom salad too was a burst of flavours that had me wishing I could replicate it at home. 

The pastas that the chefs sent out for us to sample were lovely and the pizzas just what the doctor ordered. Though the spaghetti with clams is not quite my thing, I loved the pasta with beans. The fusilli with lamb ragout has been a staple and rightly so. Comfort food at its best undeniably. The spinach lasagna too was cheesily delightful and oh yes that reminds me of the spinach and ricotta croquettes we'd had too with a lovely pear based sauce. 

 
The pizzas, what can I say, cheese and rocket and shrimps and such a perfectly thin base. It can't get any better than that! What stole the show for me in mains though were the risottos. Try the tomato based one and the one with scallops. Just beautiful !


For the desserts, I will let the pictures speak for themselves. You can order almost any dessert on the menu and rest assured it will be the perfect ending to a fantastic meal. There is a surprising gelato on offer - a pizza flavoured one! It may be an acquired taste and I would say try it at your own risk! But you can see the number of different ones we ate on rather full tummies. Says a lot about this place... your hunger will well and truly be satiated but the heart will always want more.

Masterchef Season 5 Chef Dinesh Patel gets cooking at Radisson Blu Agra






We were all very excited to attend the Masterclass by Dinesh Patel whom we all followed religiously during the Masterchef Season 5. His passion and zeal for cooking was very well evident in his style. He is a shy and reserved kind of a person and doesn’t speak too much, yet in our conversation with him he spoke his heart out about his passion for cooking. He said “I always wanted to be in the kitchen and experiment with ingredients. I own a patisserie in London, which is doing really good, by the grace of almighty”.

Dinesh gives the credit of his immense love for cooking to his grandmother who remains his inspiration till date. With a background in law, Dinesh pursued his food dreams by stepping into one of the finest cooking reality shows. At the age of twenty-one, the baking expert has set unattainable culinary benchmarks on the show!


 The afternoon began with Mr. Paritosh Ladhani, Executive Director, Radisson Blu, Agra, welcoming the guest and Chef Dinesh Patel. Mr. Ladhani has driven the property towards greater heights with powerful strides into the hospitality domain. He hails from a business family that happens to be the biggest Bottler for Coca-Cola India. His family has been the No.1 bottling group for the company for the last 20 years, and this continual supremacy inspired him to venture into other business ideas, such as, hospitality.

With a background in law, Dinesh has followed his heart for baking and embarked on to pursue his passion on such an illustrious platform (Masterchef India) which has enabled him to set his foot forward to his home country India and connect with his roots. Chef Dinesh Patel, who is better known as the ‘dessert king’ whipped up a two course meal which included a non-vegetarian starter and a mouthwatering dessert for the media and the guests present. 



Showing solidarity to the city, Dinesh named his starter “Agra Petha Savoury Salad” and the dessert was called, the “Shahi Tukra Summer Pudding.”

Speaking on the event, Dinesh Patel says, “I feel extremely thrilled to be a part of the master class hosted by the gorgeous Radisson Blu hotel in the beautiful city of Agra. It’s always an amazing feeling to meet new people and cook for them. I’m so grateful to have gotten the opportunity to share my love of cooking and food with so many more people through this master class.”


The enormously talented, Chef Dinesh Patel seeks inspiration from his grandmother’s cooking skills which has enabled him to develop a strong zest towards cooking. Adding an element of culinary delight, Dinesh kept his demonstrations interactive, highlighting the tips and inspirations for each of the dishes. 

Speaking on the event, Executive Director, Alka Ladhani says,”It has been a wonderful experience hosting the talented Dinesh Patel and his Masterclass at Radisson Blu Agra. We are very proud of our food heritage in Agra, and who better than Dinesh Patel to embark on this culinary journey with us. I am very grateful to our guests who took out time to be a part of this mid-week culinary getaway.”

Chef Dinesh’s unique techniques and approaches in combining ingredients and creating magic through his delightful food kept the guests and participants immersed throughout the session. Dinesh’s cooking is a reflection of himself, the way he is fused with an Indian heritage and western influence; which is the best fusion of both the worlds.With a beautiful ambience at Radisson Blu, Agra and some appetizing food, this master class was truly a treat for every individual present there.

Daawat-e-Khaas at JYRAN, Sofitel Mumbai





8 years back I have had the chance to savour Awadhi delicacies by Chef Mujeeb-ur-Rehman at a leading five-star hotel in Mumbai. So when I was invited to savour his Kashmiri delicacies, I just couldn’t say no. The evening was not just about flavours of the Valley state but also a discovery and history of the rich Kashmiri cuisine.

Chef Rehman is a descendant from the cooks of the royal family in Lucknow. Cooking is in his blood as he has grown up watching and getting trained from his Grandfather. His philosophy has always been to learn the history of whatever he serves and know exactly why a few ingredients have to be used in tandem with the others. He has always been a follower of old school and does traditional recipes like no one else. Slow cooking and authenticity has been his forte throughout because he doesn’t want to do fusion cooking on an ad hoc basis but with proper research and experimentation.

This time he has come up with the best of Kashmiri cuisine at one of the most luxurious property, SOFITEL BKC, Mumbai.

We started the meal with Kukur Rass, a mildly spiced chicken soup, which was perfect to kick start, our appetite for more. This was followed by a variety of starters, Tsaman Warimasala Tikka- Cottage Cheese Marinated with Hot Spices and Cooked In A Clay Oven, a very interesting Khubani Kababa Apricot Stuffed, potato cake and Wazwani Aluv Tukri- Chili Yogurt Marinated Spicy Potato this was a winner for me out of all the veg starters.  The Kukur Lebabdar Tikka tasted like a regular chicken tikka, the Maaz Shammi was melt in the mouth and the Maaz Seekh Kebab was succulent and flavourful.  

 
Next was a delightful spread of Kashmiri dishes like Muttur Tsaman (Cottage Cheese Simmered with Exotic Fresh Peas Gravy which had green gravy with a hint of saunf that gave a unique taste. Lotus Stem is one of the most important ingredients of Kashmiri cuisine and the Nadur Yakhni had rich yoghurt gravy. The meal is incomplete with the traditional Kashmiri Dum Aluv, but it had thicker gravy as generally Kashmiris make very thin gravy of it.  We also tried non-veg dishes like the Kukur Dhaniwal Korma- again a green chicken cooked in yogurt and the Gushtaba along with Zaffrani Kukur Palao. Baqurkhani –White flour bread, dough prepared in milk dash of sugar with topping of poppy seeds was a winner all the way. 


After such a rich meal there was no room for desserts but we couldn’t say no to Shufta-Cottage Cheese and Dry Fruits Halwa the tinge of honey and sugar syrup with dry fruits was a delight. The perfect ending to the meal was with Chilgoze Piste Ke Phirini, just rightly flavoured with Saffron. 


 
A descendant of Khansamas of the Wajid Ali Shaha era, Master Chef Rehman said, “We tried to maintain the essence of the Kashmiri cuisine but we do have to tailor make the menu according to the local tastes and the in-house guests.” 

Take your pick between the bright ambience indoors and soft romantic ambience outdoors, just the perfect weather to savour the finest royal delicacies from the lush valleys of Kashmir.

WHISKY SAMBA - All Set to Rock 'N' Roll





First look will make you crazy; my eyes were just glued to the façade full of golden hues and royalty emanating from the grandeur of the whiskies lined up at the most elegant Bar, I have witnessed in recent times. Welcome to “Whisky Samba” my friends….. A brand new place by ace restaurateur Ashish Dev Kapur who revolutionized the way you drink at bars with his super hit concept “The Wine Company”. 

He has teamed up with Deepak Seth and Joydeep Singh to create this awesome place which portrays their undying love and passion for Whisky. Their main aim is to showcase and revolutionize the whisky drinking experience through the carefully selected brands from all over the world. In addition to the unique whisky cocktails paired with great food from their stable, Whisky Samba will change the game altogether.


 Chef Akshay Bhardwaj is a Noma returned or I must say Noma trained Chef who has woven some of the best stories around food. Menu is very carefully done, with the best from all over the world. Using techniques like Chargrilling, Braising, Dehydrating, Baking and Curing he has done wonders with whatever we tasted from the Chefs tasting menu. I loved his ideology of using the best of “Locally sourced ingredients”. 

 
We loved the Salmon Carpaccio (Art on plate) and the Shrimp Ceviche (with raspberry and litchi compote) OMG, what lovely burst of flavors …. It was so damn good and didn’t seem to be raw at all!! The restaurant is not following any cuisine as such; it is defined by the best of cooking techniques and the freshest of ingredients.

 

  
Tortellini coated with a thick film of plum reduction stuffed with goat’s cheese was heavenly and how can I forget the Mushroom Risotto, it was so flavorful and creamy yet the bite was just perfect in the rice and the charcoal coloured mushroom crisp was a perfect accompaniment. 

 


The palate cleanser was nothing short of an artistic creation in the form of a frozen whisky cocktail (Whisky sour ice shavings) topped up with fermented lily and passion fruit bubble covered in chocolate.

 
The biggest delight for me was the Short Rib braised for long, finished to perfection on a grill with a flavorful jus served with house baked brioche, salad and an awesome mash which was like heaven on tongue. The Pork Ribs too, were melt in the mouth types with a nice spicy flavour and were quite different than we usually eat anywhere else.


  


Desserts are to die for, and don’t even dare think about something you can find anywhere else. Chefs take on sinful delights is highly innovative; Five textures of Pineapple is one of them, one needs to savour this Nirvana. Also not to forget the chocolate mousse bubbling hot from the oven served with house made Magnum style choco bar filled with freshly ground mint …. Oh! My my …. Need I say More ?


 
Though, I had to miss the most sought after whisky cocktail renditions at Whisky Samba (Off Alcohol for a few days), but will surely visit it again soonest to try them all perfectly paired with the excellent food that this place has to offer.
