Italian cuisine in India has already made a strong mark
with its ever so popular Pizzas and Pastas. The newest generation, born in the
last 8 to 10 years has taken these dishes as part of their own cuisine coz they
have seen their moms cooking them at home since their early days. It shows how
deeply Italian cuisine has penetrated our urban households.
So clearly, something new and exciting is happening.
Italian is still the favourite European cuisine of most Indians. But we are
finally graduating to the food that Italians really eat in their own country! It's
familiar, easy to cook at home and has a wide range of vegetarian options,
which is probably why Italian food is reaching every nook and corner of the
country.
There is something very honest and rustic about Italian cuisine.
Taking this to a new level, Chefs are trying to
replicate things in a more rustic and traditional manner as mostly Italians do
at their homes. Chef Amit Kumar is one such man who has never been to Italy
ever in his life yet has done wonders at the brand new restaurant Bella Cucina
which opened up at Le Meridien Gurgaon last week.
He hails from one of the most underdeveloped areas in India,
Motihari-Bihar. His hard work and zeal to learn has turned him from a regular
chef into a master chef. He has done his research in Italian cuisine for over 2
years which is now being utilized well in this kitchen.
We were amongst the lucky few to be invited on the
opening day and savour some of his masterpieces.
He is doing
wonders with fresh ingredients using all the latest techniques and equipment
being used in modern cooking like dehydration, paco jet and compression etc.
Bella
Cucina is churning out remarkable food particularly its signature handmade
Pastas, Thin Crust Pizzas, Breads especially the porcini brioche & a wide
selection of imported Seafood, Meats & Grills. Influenced by the Northern
and Central regions of Italy, Chef’s own interpretation of Salads, certain
dishes & Desserts will both surprise and delight you.
I loved the
smoked tuna served with a poached egg on a bed of cauliflower puree. It was
really so natural and full of flavors. The Mushroom cappuccino or simply we can
call it a soup is again so good, can’t be expressed in simple words. It’s
served like a coffee in a cup with a side of brioche bread loaf. The Desserts
have also been worked upon nicely which is evident in the end result. The 8
layer chocolate cake is served on the table and poured with mildly hot cream
mix which is a spectacle to watch. The bursting cake and the volcanic eruptions
look beautiful and yes the cake is yummy too.
Being the
first day of the restaurant, we had reasonably good food with impeccable service.
The chef was on his toes all the time serving food and taking feedback from the
guests all the time. Chef Suprabhat Roy Chaudhary (Executive Chef) was also
around all the time taking care and supervising everything. Ms.Anadita Singh,
(Mgr. PR & Marcomm.) was our ever so graceful host for the evening which
made the whole experience even more pleasant and worthy.
Bella
Cucina has been one of the best openings this year. The incredibly customer
friendly pricing, great ambience, most sumptuous food and flawless service will
soon make it the most sought after Italian restaurant in the town.
