Festive Recipe by Exec.Chef Roy - Le Meriden Gurgaon

Mix Berry Verrine

For Jelly:
Mango puree                        100gms
Gelatin sheet (one)               3 gms
Sugar                                    20 gms
For Mascarpone Cream:
Mascarpone cheese             150 gms
Whipped cream                   150 gms
Icing sugar                           40 gms
Vanilla pod                            1 in number
Fresh Berries:
Strawberries                         2-3
Blackberries                          2-3
Blueberries                            2-3
Red Currant                          20 gms
Raspberries                           5
For Mango jelly, boil the puree with sugar and add gelatin
Put the mango jelly on the base of the glass
For making mascarpone cream, mix all the ingredients together and whip it till it is semi-whipped
Pipe it on the glass over the mango jelly, sprinkle with mixed berries and again pipe the mascarpone cream on it
Garnish it with the remaining berries, gold leaves and pistachios

Le Meridien Gurgaon Appoints New Executive Chef Suprabhath Roy Chowdhury

Le Meridien Gurgaon appointed  Suprabhath Roy Chowdhury as the new Executive Chef for its 285 room property at MG Road, Delhi-Gurgaon border. Roy joins Le Meridien Gurgaon after a successful stint with Eros Hotel managed by Hilton, Nehru Place, New Delhi. His perfect sense of culinary expertise comes from the fact that he has worked in most renowned kitchens in India, abroad and has grown up in the foodie city of Lucknow, feasting on the kebab parathas and pulaos in its by lanes and Bengali food cooked at home. 

On appointing Roy to his new role, Mr. David Hopcroft, General Manager, Le Meridien Gurgaon said, “We are looking forward to our association with Chef and are eager to benefit from his outstanding skills and expertise that will keep up to our brand name. I wish him all the best for his tenure here.”

Starting his career with The Taj group of Hotels and having assisted some of the best master chefs in the trade, he has acquired a fine understanding of cuisine, reflected in his bold and fresh take on food and artistic and modern presentation styles.

Prior to this, Chef Suprabhat has been credited with conceptualising and opening the multi award winning restaurant, The Pink Poppadom at the Hyatt Bangalore where he was the Executive Chef. He has also been the Chef de Cuisine at Nina, the award winning fusion restaurant with an Indo-European concept menu at the One and Only Royal Mirage, Dubai. With his extraordinary style & vision he will spearhead the talented & passionate team of Chefs at Le Meridien Gurgaon.

On his new appointment, Roy said “I am extremely delighted to be a part of Le Meridien family and explore the best road ahead.”

BENARES - Grand Trunk Culinary Journey at "Dilli32" Leela Ambience Convention Hotel, Delhi

Varanasi, also known as Kashi and Banaras, is one of the oldest continuously inhabited city on earth. Situated in Uttar Pradesh on the banks of river Ganga, Varanasi is among the most revered religious destinations in India. The city gets its name from two rivers – Varuna and Assi which meet here. The word Kashi is derived from the word ‘Kas’ which means to shine. Varanasi is famous for the bathing ghats along the banks of river Ganga.

Food in Varanasi is basically traditional, plain and simple. Banarasi Khana, or local delicacies, are known for their flavors. Many dishes here are flavored with asafoetida, ginger, bay leaves, cloves, cardamom, cinnamon, and/or dried fenugreek leaves. Varanasi is also known for its street food and chaat vendors. Aloo chaat is very common. 

“Benares” is the newest stop in the Grand Trunk Culinary Journey festival of the Leela Ambience Convention Hotel since it began from Amritsar and then stopped at Old Delhi. The food festival celebrates cuisines across the NH1 (Grand Trunk Road) in India bringing the food enthusiasts most popular, delectable and authentic dishes from each city. 

Chef de Cuisine Ashwani Kumar Singh and Chef Rohit Tokhi travelled to Varanasi and brought back the best of city’s culinary heritage with him for us to savour. The traditional mix of Uttar Pradesh with a touch of Bihar is something that sets the food in Benares apart.

“Dilli 32” is running a Benares Food Festival with all pomp and show in its al fresco setting.  We tried most of the fare starting with the Tamatar ki Chaat, Chudda Matar which was so good I had multiple servings of it. The traditional nashta / breakfast consists of Kachoris with Aloo Subzi and Jalebi which are very well replicated by the chef and seem to be very authentic. The love for milk can be very well experienced in Benares food. Starting from the Lassi, Thandai, Kalakand, Malaiyo to the Dahi vada which is again made up of Chaina yest you read it right it’s a rasgulla dipped in dahi and chutneys and tastes awesome.

We also enjoyed the best of Bihari cuisine as its very much prevalent in Benares due to its close proximity. The Baati Chokha ( Litti Chokha in Bihar) was nice and I enjoyed it well with the Mutton curry. The poori or the Badi kachoris was also polished off well with the aloo bhaji. The vegetarian fare included the Baigan kalonji, Nimona a kind of Dal and  Kadi bari. My favorite being the Baingan (eggplant) cooked in mustard oil with traditional spices. The boti kebab and the Ghutwa kebab were also too good and tasted very well.

To wrap up our meal we were offered the famous and traditional desserts like the Kheer Mohan a kind of Rasgulla but a drier version , the candied Permal ki mithai and the most intriguing Madgal which was a Urad Dal halwa cut into pieces. Personally I did not relish it too much but yes it was made to perfection.  Though a Benarasi Paan would have closed this experience in a much more dramatical manner. Looking forward to the next destination and its endless culinary delights.....

HYATT REGENCY DELHI kick starts the 2016 edition of Culinary Challenge

A unique initiative by Hyatt Hotels in India and the SMILE Foundation

To emphasize Hyatt’s focus on its rich culinary heritage, Hyatt Hotels in India introduced the “Hyatt Culinary Challenge --people cooking for people” and this year, we are celebrating the third season in October 2016 across 13 Hyatt India destinations. The nationwide culinary challenge was kick started at Hyatt Regency Delhi on October 15, 2016 at Regency Ballroom.

Seven CEOs and directors from companies including Rio Tinto, Catai India, Way to Go Events WTG and diplomats from Republic of Malawi and Taipei ditched their usual corporate routines to woo the judges with their culinary skills and claim the title of Hyatt Culinary Challenge 2016. Bollywood actor John Abraham added to the evening’s glamour with his surprise guest appearance and a round of photographs with the excited kids and participants. Mr. Chung Kwang Tien, Ambassador of Taipei economic and cultural center in India, prepared the winning dish- Stuffed green pepper while Mr Alfred Villi, High Commission of the Republic of Malawi cooked Roasted Chicken to claim the first runner-up title at the evening.

The Hyatt Culinary Challenge was conceptualized as a unique event that aims to bring together individuals from the corporate realm on a common platform where they could showcase their culinary expertise and passion for food in an interactive culinary event. Each participant was paired with a child from the SMILE foundation, Hyatt’s partner NGO in India and each team executed a recipe of their choice for the judges. The corporate winner from each city will compete at the grand finale in Chandigarh in November 2016.

Hyatt India Culinary Challenge preliminary rounds will be further held across Hyatt Hotels in Ahmedabad, Amritsar, Bangalore, Chandigarh, Chennai, Goa, Hyderabad, Kolkata, Ludhiana, Mumbai, Pune and Raipur in October 2016 and the finale will be held at Hyatt Regency Chandigarh on November 19, 2016.

Speaking on the occasion, Harleen Mehta, VP Sales Operations, Hyatt South Asia said, “The Hyatt Culinary Challenge is an endeavor to bring together people to celebrate their passion for food and make a difference to the community while doing so. Weber Grub Theatre at ‘The Grub Fest 2016’

Weber India, a 100% subsidiary of Weber-Stephen Products LLC is participating in The Grub Fest 2016, the biggest and the most vibrant food festival in the country. The three-day festival is slated for October 14th- - 16th, 2016 at Jawaharlal Nehru Stadium, New Delhi. Through this platform, Weber India aims at breaking existing myths amongst people and spreading education about grilling. It will showcase a new dimension to the art of grilling and endeavours at making people aware of the benefits of Weber’s invention, closed- lid grilling.

At The Grub Fest, Weber is partnering with The Grub Theatre, where Weber Chefs would be presenting the art of grilling to food connoisseurs during two-time slots, 3-4PM, and 6-7PM on all 3 days.  Adding a new dimension to the culinary experience, star chefs would be demonstrating the scrumptious fusion of local gourmet with a twist of American grilling culture and will be showcasing Weber’s unique method of cooking - “covered grilling” to the visitors at the theatre. It will include live cookout session to showcase grilling, baking, roasting and smoking on a Weber grill and will present the easy closed-grill technique starting from lighting the charcoal to making a full meal from starter till dessert. Additionally, there would be screening of various food-centric movies, mixologists’ demos, chef talks and cooking demos.

Ltd. plans to sell 3.6 million bottles of Witlinger in their key market with GMV (Gross Merchandise Value) of over USD 8 million.
