Awadh, a region that has been influenced greatly by the Mughal cooking techniques, is synonymous with the cooking patterns of Lucknow, a city known for its food, its heritage and also known as the city of Nawabs. The Awadhi cuisine, which is a gift to us given by the city of Lucknow is known for the richness of its recipes and its ingredients. The spread consists of kebabs, kormas, biryanis, sheermal and warqi paranthas.
 


Celebrity Chef Rehman a descendant of Khansamas of the Wajid Ali Shah’s era along with his team at Crowne Plaza,New Delhi, Mayur Vihar Noida has prepared a meticulously laid-out ceremonial dining spread (Dastarkhan) of Awadhi cuisine to make us relive the era of Nawabs. Be ready to get high on flavours, aromas and culture as you devour on the dishes presented in the lavish spread.With , support of the Executive Chef Diwas Vadhera at the same hotel, this festival is being conducted as part of the regular buffet at their all day dining restaurant, Infinity .

 
Start with a variety of vegetarian and non-vegetarian melt in the mouth Kebabs; Paneer Zafrani Tikka- so light, moist and flavourful, Galauti Kebabs- you taste one and you will know what heaven must taste like, delicate and infused with just the right spices, one can have hundreds of them. Mutton seekh kebabs- succulent, bursting with subtle flavours that will seduce your taste buds.


Chef Rehman’s signature dishes- Nihari Gosht and Achari Gosht are the stars of the show. Both these dishes are the reflection of the chef’s understanding, knowledge and love for food and his hometown Lucknow. These curries are full of rich flavours and the meats are cooked to perfection. Tamatari paneer, as the name suggests is cottage cheese cubes cooked in a velvety tomato gravy is a must have for all the vegetarians. Also a Nawabi Baingan Bharta, a creamy dish with roasted baingans as its base is delectable. The taste of these dishes is elevated when had with a Bakarkhani and a Kashmiri roti.

 
Dastarkhan-e-Awadh is an effort to give you the real taste of authentic Awadhi cuisine. The cuisine is both simple and complex in its flavours and cooking techniques; it is an art.This festival highlights the food culture of Lucknow and you will end up feeling envy of the Nawabs who used to savour these dishes every day.
